Being a career woman, wife, and mom of five I often had to come up with quick and healthy foods. Here is one my entire family enjoys to this day.
1- 6oz. can of pink skinless & boneless wild caught Salmon
1- Egg (organic cage free)
½- cup of Almond meal
¼ - tsp. Garlic granules
2- TB. Coconut oil (organic cold pressed)
Drain canned Salmon, place in mixing bowel. Combine with almond meal, egg, garlic granules. Mix well with a fork, and form into patties. Makes two to three patties. Heat coconut oil in a skillet medium high to high. Cook patties until golden brown on both sides. Serve with breakfast, lunch, of dinner. I personally enjoy this high energy protein patty with just a salad at lunch or dinner.
COOKS NOTES
I buy the BEAR & WOLF wild caught pink canned Salmon from Costco a 6 can sleeve
I purchase the Almond meal, organic free range eggs, and garlic granules at Trader Joes
The cold pressed coconut oil can be purchased at most good health food stores.
About the ingredients
Wild caught Salmon is a fish that lives as it was intended on its natural food sources. Wild Salmon is rich in Omega 3 high in protein and has no carbs as well as many other important nutrients and minerals. It is an excellent food source for the brain and heart. Farm raised Salmon on the other hand is Genetically Modified, pumped full of anti-bionics more than any other farm raised animal in the country, is artificially colored, full of harmful chemicals, and has 40 times more PCB’S than is natural cousin the wild Salmon. If that were not enough Salmon farms also pose a major pollution threat to our beautiful oceans and the creatures that live in the waters nearby. For further information go to www.grinning planet.com, and look under farm raised Salmon pollution.
Almond Meal almonds are high in quality protein, vit b complex, vit. E rich in minerals highest nut in phosphates for the nerves, high in calcium and iron, magnesium, potassium, manganese. Good for the pancreas blood and bones, also has anti-cancer anit-tumor properties.
Organic cage free eggs Eggs are (or where before there commercialized production) a balanced, rich source of nutrients. Primarily, eggs are designed for making new birds rather then for our culinary pleasure. To make a new bird the egg must contain all the minerals, vitamins, proteins and fats necessary to create a fully formed life. Cage free organic eggs are nutritionally rich as opposed to commercial eggs which are produced cheaply by the millions and who’s yolks are almost colorless, tasteless and unhatchable. Not exactly the proverbial ‘good egg’ any more. Like humans, chickens in concentration camps don’t perform there best, because they are not in a healthy situation. Like us, healthy chickens require sunshine, whole fresh foods, fresh air, and room to move. Then they lay healthy eggs.
Garlic graduals Garlic used since antiquity as a medicinal spice by the Babylonians; a stimulant for Greek athletes; by the Egyptians 4,000years ago for heart respiration problems. Stimulates immunity and lymph increases interferon and natural killer cell activity. One clove of garlic equals 100,000 units of penicillin. Garlic is one of the oldest recorded herbs of mankind and volumes are written as to its benefits for mankind. For fun try googling garlic some time.
Coconut oil Although coconut oil has been given a bad rap recent studies now show that coconut oil is one of the healthiest dietary oil on earth. One of the many benefits is it speeds up the metabolism providing an immediate source of energy, while supplying fewer calories. Coconut oil also has a host of wonderful health benefits here are just a few. It strengthens the immune system and protects against viral’ bacterial and fungal infections. Detoxifies the liver and helps prevents heart disease. Coconut oil does not revert to trans acids when heated. For more information I suggest reading The Coconut Oil Miracle by Bruce Fife.
